Sews ups have a learning curve, are time consuming, and unless you buy real good ( read expensive) sew up tires , a good clincher with latex tube will ride nicer than a good tubie unless it also has the latex tube. Continential Sprinters don't. IMO invest in good wheels and tire/ tubes and when you get to the riding levels where some else buys your tires then ride sew ups. Or like me, if you already own several nice sew up wheelsets, buy tires on sale, repair punctures, use tire savers and have another wheelset ready to go while you wait for the glue to dry, live with the hassle.
