How about:

- Taos or Santa Fe, New Mexico (or even spend a few days in one, a few days in the other). Beautiful roads, food and shopping. And spas. And outdoor hot tubs. A number of 4- and 5-star resorts/hotels there. Like this one: www.bishopslodge.com. Hiking, mountain biking, whitewater rafting in the summer, too.

- Couer d'Alene, Idaho. Try Couer d'Alene resort. I've done some of the roads by car (not by bike), but I know a number of centuries/organized rides/bike tour routes run through and around the region.

- Salish Lodge, Snoqualmie Falls, Washington. Far outskirts of Seattle. Nice resort. Close enough to the city you could do sightseeing/shopping/dinners in Seattle when you're not riding.
