MTB/touring bike rebuild

I am in the early planning stages of a long tour 4 + months possibly to South America, Asia or to Europe once again. I am going to rebuild my old 1992 Rocky Mountain Hammer MTB/touring bike, but I also have the option of taking my rebuilt Miyata 1000. The frame seems to be in good shape and the bike has a guesstimated 9000 + km of mostly touring distance on it.

The SunTour LTD XC thumb shifters, brakes, derailleurs and front hub are original and seem fine. I’ve replaced the BB, chainrings and rear wheel but I probably should replace most of the components to be on the safe side.

What are the recommendations for upgrades?
