New Wheelset Problems

I just sent this email to the wheelbuilder who did my new wheels. Since I know he's busy and I may end up having to call in a couple of business days if he doesn't get back to me via email I'd like to have a few new opinions since this is my only wheelset besides what came stock on my Trek 1000.

I have my velocity aerohead / specific perception wheels you built up for me. Unfortunately, I only have less than 4 hours or 100 miles on them since I received them at Christmas (it took awhile to get some more tires and another cassette).

But since then the rear wheel hub is making some sort of "crunching" noise while the cassette catches and is spinning. The freewheel sounds smooth and fine but every time you go to pedal and the cassette is spinning there is this weird noise. I thought it might smooth out after awhile being new hubs but it hasn't and I'm worried about that. It's an 8sp cassette on there and prior to that putting my other 8sp wheelset I have been using on there it works fine still.

Also, the front wheel is already out of true. I'm worried because I thought a wheel that was properly hand built and tensioned with a tight tolerance would not come out of true so easily or it was never trued properly when I got them and it only started to wobble a little worse that made me really have to inspect it.

I was using a 12-25 8sp on my current set and it works fine. I have a 12-26 on the new wheel set right now and I thought the cluster was close enough nothing major should of been done to the rear derailleur.

Was I right in assuming this front wheel shouldn't be out of true? It can't even make a pass with the quick release open where the wheel is wobbled.
