Did Ventoux last year on a triple- but a bit stronger now. And Dordogne area has plenty of slopes in it aswell. Not just the flat bits by the river.
a 34x27 is on the extreme end (unless you're old/slow/have creaky knees).
i'm far from a great climber, but had no problems handling SW France with a 39x23 (that includes the aubisque).
