What hubs/spokes/rims?

I was thinking of picking up a pair of ultegra hubs at performance ($56 a pair after 20% off coupon...thanks sydney!!) and maybe some Mavic MA3's ($48 a pair after 20% off coupon).

Are these good choices. I'm sure the hubs are, but what about the rims?

What spokes should I use? What pattern?

P.S. I'm planning on attending wheel building clinics in my area so that I can do it myself...along with a few tools. I'd like to bring the parts with me when I attend though.
Consider 36 hole ultegra hubs.Don't know that much about ma3,but Mavic cxp33 are often recommeded for big guys.14//15 butted spokes will work,3x.
