I spent a week bicycling in Hill Country once, and loved it. I think it's a perfect place to just pick one spot (Fredericksburg is a good one) and then take different loops each day. You certainly wouldn't need to bring a touring bike if you have enough carrying capacity on your road bike (a saddle bag or handlebar bag) to carry the basics for a day.

You can also do loops out of Boerne, Kerrville, or Johnson City, as I'm sure you know. I once googled around and found a touring club (I think called the Hill Country Cycle Touring Club, or something like that) that had a good route library on their website).
