Go with what fits best after 10min standing in them in the shop. That won't prevent all problems, i.e., hotspots, numb toes, flexy soles, etc., but it should give a good indication of what works for you.

Personally I'd find the cheapest Sidi SRS shoes and use those. Then there's no problem with throwing out decent shoes with worn out rubber soles.

While working in a bike shop shamino shoes were always sold smaller than asked for because of how much they stretch, especially if wet. I can't comment on pearl izumi other than their running shoes are very comfortable. Comfort aside there's still the worn out sole on perfectly good shoes problem with the two, i.e., no SRS.

Comparing velcro straps to my sidi dominators - I'd say the plastic top strap was better as there's less stretch. The velcro, on another, different pair of shoes, I used to cinch down as tight as possible and occasionally retighten during a ride. I'd adjust the plastic strap until it was just snug and never touich again for the ride.
