Brake performance is dictated more by which pads you use than caliper.

What brake levers are you using? Chorus skeliton brakes don't have a cable tension release so you can take off the wheel easily. The release mechanism is on the brake lever.

I have a set of Tektro levers on my Langster that has the release button so it'll work. If you don't have the release, than you might have to go with Ultegra.
