P.S.: Those weird root things aren't artichokes. They are roots. I don't know what you do with them...
This is a good how-to. As a California native, I know. Actually, the heart goes quite a ways down the stem, so one does not need to cut the stem off too short, if your pot is big enough. Hmmmmm. Artichokes! My mom used to save the heart 'til last. My sister would grab it, if she had the chance.
