loosening tension on Shimano clipless pedals

My new Kona JTS came with Shimano pedals--clipless on one side and platform on the other--but didn't come with instructions or anything. I've never used clipless pedals before, but I've read that loosening the tension is a good thing to do if you're just learning how to clip in and out (and then tighten them later as you get more comfortable).

The pedals have two sets of screws on each. There are two star headed screws 'inside' of the part you clip into, and then to allan key screws on the front and back of the pedal.

Which set of screws to I loosen, and how much should I loosen them by?
