Well, that doesn't apply if you're standing or walking -- you still have to suck the water through the tube.
Even so, it's not any more difficult than drinking through a straw, and the seal at the bite valve keeps air out of the tube.
My concern about strapping a water bag to the frame would be the drinking tube getting loose and catching in the chain or crank.
