There are several different types of jerky including beef, salmon, turkey, tofu etc. There is also protein bars made with Quinoa (keen wa) that are permitted for Passover. We actually eat is and it's pretty good. We also eat products which use flax and I can't find anything that would suggest that is is not kosher.

There are some derivatives of kitniyot, such as corn oil and peanut oil, that unless you are pretty strict many still use during Passover.
