Gotta watch some of those dried mashed potatoes... many contain corn syrup solids and soybean oils.

I don't know why you've nixed the thought of carrying eggs, Neil. They've always traveled well when I take them. Parboiled potatoes should be kept cool. It's not that difficult to boil raw ones in the field. Olives are OK, yes?
