If I was buying a bike and wanting them to swap the cranks/BB for me I would have given them the heads up when I gave them the deposit and brought the parts in ahead of time so they could put 'em on when they assembled the bike. Thats just me though.
Actually, I did tell them of my plans when I made the deposit AND I reminded them about it when they called to let me know it arrived. Oh and I reminded them a third time when I called to say I was on my way over from work. Each time they said no probelm, yeah we can do that for you. Still I arrived, and the same dude I talked to on the phone was like "Oh yeah, that's right....". All of a sudden something they cheerfully agreed to do became an ordeal. The mechanic looked like he wanted to dump in his pants. I fully expect attitude from nyc shops in varying degrees but not when you're buying a complete bike. As I was walking out, the other customer started with "I need a basic road bike for some racing on the side..." followed with "Whoah, whoah, whoah, backup,....you said you need a road bike, what kind of racing are you going to be doing, have you ever had a road bike?"
