Normally, I use a toilet. But I'm in southern CA. Where I normally start in Irvine/Newport Beach, you can ride for 2 hours in any direction and STILL be in the city (or the burbs). And no, I don't pee on my bike (that's nasty).

You could get SPDs, but they have such small surface area, you could develop hot spots, and they don't have true float.

Double sided, float, large platform ... your choices are limited. What limitations there are with the Xs, you have to live with.
