We took a Specialized Globe (pretty basic "urban hybrid" bike) and loaded it with front and rear racks, panniers, fenders, lights, and all the little goodies you would need. We set it right in front of the door to greet people as they come in.
Since we set that bike up a couple days ago we have sold about 10 of the same bike with similar cargo hauling setups. I think you are right, people just dont know what can be done.
I had to order my
Redline R530 the LBS where I got it doesn't stock. They mostly sell cruisers, BMX and MTB. It sat on the floor for over a week before I picked it up, generated quite a bit of interest. I left several business cards with them if anyone has any questions and promised to provide them with pictures when I get it pimped out.
Too many people think it is nuts to spend upwards of $1k on a bike...but they won't hesitate to spend that much on a custom wheel or two for their "ride" or even a gas grill

(and put them on the credit card to boot!)
No our infrastructure is not particularly conducive to bicycle riding, but we are going to have to become visible and vocal enough to get the ball rolling so joe sixpack and the like will even consider it.
