Personally, I don't like laces on my biking shoes.
I also don't like clip-in shoes for touring.

For touring I use platform pedals with a little plastic strapless (ATB) clip that just keeps your foot from slipping off the pedal when standing. I use quality non-cycling hiking shoes or boots.
