I actually did a non-biking activity out there last year, hiking up Quandary peak to 14,286. That was an unbelievable experience.
Yeah, I've been up most of those front range hills every way possible (including the MTB routes -- Falcon, Morrison Slide, Dakota Ridge, Red Rocks, Green Mtn, Apex, White Ranch...). Good stuff.
One of my favorite long rides was from downtown Denver, up Deer Creek Canyon to Aspen Park, then Evergreen, and descending back through Morrison into Denver. Killer.
+1 to hiking fourteeners too. If you get the chance to hit Gray's and Torry's, you can do two in one day, and bring some cheap wind pants to ride the snow field down (even in August)
Unfortunately, I never took the time to go hit Long's Peak
