It's likely that the 6 speed will have a narrower range than the 21 speed - so its highest gear won't be as high and its lowest won't be as low as on the 21 speed bike. As well it won't have as closely spaced gears. However if it is not to be used for racing (high gears and/or closely spaced gears) or steep hills (low gears) it may be perfectly adequate.
