you know stuck in between sizes, at least according to their size charts? at 6'3'' 175 lbs with 32" waist & 34" inseam i am thinking about going with XL. likely long enough, but maybe a bit too big in the waist area.
i know, i know, i know......i need to find a LBS and try some on.

Sounds like you need an XL.
I'm 6'1" and the L size fits ok in the shorts part but the bib straps are quite tight. Assos straps seem to run small compared to other brands so even through you might need a L for the shorts I doubt you could get the straps over your shoulders, certainly wouldn't be comfortable.
