I think my preference is for a silver stem and bar combo. I don't really mind no grooves, but I wouldn't mind them either. I rode my Raleigh Supercourse for many years with Barcons that use the extra thick, metal cables routed under vintage, no groove bars and it wasn't a problem.

I much prefer silver/silver, but at the the time I built the Palo Alto I could not come up with a suitable silver bar. I now have two in reserve - one is a dual-groove Modelo that will be going on my Cinelli, and the other is a newer something-or-other that will go on the Ciocc (if I build it).

You're right not to fret about grooves - the cables will naturally lie under the knuckle creases of your fingers and you will not notice them.
