I took up road cycling seriously at 40. I don't race very much and still get dropped from time to time. My times are coming down for longer distances, but it's speed on the hills that lets me down.

You will need to add some speed elements to your training, and the best place for that is regular racing. Grovelling it out at the back of the pack will help develop the speed you need.
