This is the kind of question you might be answered here at bikeforums under the regional forum for Texas. Or ask around w/a local cycling club.
Another good way to find routes through major metro areas is to look at bikely.com, and do searches.
I used to live in Dallas so I can appreciate the challenge of getting through the "Metroplex." It's a full day of riding just to get across town if you're starting from SW Fort Worth! You may be correct in planning to circumvent the area by going North or South to avoid it.
