I haven't hit one, but I'm guessing the impact of bike against goose wouldn't be too bad. If the goose is still on the ground, the rotation of the wheel would tend to knock the goose downward, then it's just a matter of surviving the wump-wump. Not too different from a dog. In my experience, though, the goose gets airborne and attacks the bike or its rider. Once one few straight into me from the side, fortunately hitting my leg, trying to bite me on the knee while I was pedalling wearing jeans. No harm done. I was just glad the goose's head didn't go through the spokes, 'cuz I was moving right along.
