MB series for touring?

I'm planning a tour and have questions about choosing the right bike.

Dad gave me his very clean and very black Bridgestone MB2. Low miles. He bought it in Japan between 1983 and 1985, he can't remember. Very pretty.

I think this predates the whole Peterson "cult" but I understand these early models were still pretty good bikes. I think if I changed out a few things (wheels, saddle, stem and bars for sure) it would be sick. I use it right now to run errands around town and I love it for city cruising.

The frame's double butted 4130. has 18" chainstays, holes for two bottle cages, front and rear panniers, so far so good.

But I need advice about existing components that I'm mostly unfamiliar with:

-Shimano Light Action derailleurs (I hear these are low end)
-Sakae SA 28-38-48T crankset
-Suntour Perfect 5 speed 14-30T cassette
-Shimano BR-AT50 cantilever brakes

Are these worth keeping or better replaced?
Or is this frame not good for touring at all and I'm being dumb?
