Mountain bikers and other off-roaders will adjust their seat heights during a ride depending on the trail conditions. Easy, flat routes will allow a "normal" height while difficult technical singletrack requires a low saddle. A rider will want to stay off the seat completely--often behind it--over the tough stuff to let the bike move around beneath him/her.
