By all means, focus your efforts on the Louisson Bobet. I recently added one to my stable (I believe it's the C35 Pro racing model ca. 1970 with a lot of upgrading in the eighties), and it has quickly become my favorite ride. If you can maintain cars and motorcycles you will be able to maintain and revitalize an older bike without to much difficulty - the Park Tools and Sheldon Brown website's provide a lot of mechanical "how to" info, as do a few other sites, plus the experts on the C&V forum are also extraordinarily knowledgeable. French spec bits and pieces are fairly plentiful on ebay, and there are some shops such as Harris Cyclery that have some stocks of older French componentry.Viva la France!
