From what I understand a lot of Bianchi's relationships with LBS has been severed as it has become "order this amount or stop ordering." A friend from Minnesota told me that's basically what they told his shop.

I think all three of those bikes will be plenty for what you want. What are the reasons you want those three? That is, what features do those offer that you really like? Think about the type of riding you'll be doing. It sounds like the Bianchi appeals to you for mainly aesthetic purposes. Do you want that or function? Really, it all comes down to what you're looking for - I think you should identify the top 3 things you want from your next bike, or things that are important to you, and then you'll be able to select a new bike much easier.
