Passed the eastern point, just follow the bike path. After that, you can stay on the old road or Ste-Anne blvd. They are parrallel so you can switch between the two. Take highway 360 in Ste-Anne-de-Beaupré and 362 in Baie-St-Paul as Michel suggested. There's a short but very steep road (20% over 2km!) to Île-aux-Coudres. Be careful, it's very steep, twisty and there's a stop at the end. Highway 138 has quite a bit of trafic. The only "bad part" is in St-Tite-des-Caps where it has 4 lanes and a shoulder just large enough for the road grates.

Highway 138 east of La Malbaie has shoulder. There are small roads going through villages as well. I haven't been east of Tadoussac in a while but I'm pretty sure there are paved shoulders to at least Les Escoumins. I think the ferry in Les Escoumins is the best option. I used to live in Baie-Comeau and wouldn't go there on vacation if you paid me. Be careful out of the ferry in Tadoussac. People have "ferry fever". They drive fast, pass on double lines and such. Actually, ferry fever goes on almost until Les Escoumins.

Highway 132 east of ste-Anne-des-Monts is fantastic. Hills start in Manche-d'Épée. From there, it's a roller-coaster ride. Don't know anything about flying from Gaspé with a bike. I know there's an airport fee (10$ ???). I doubt they have boxes. Say hello to Steve.
