clipless and hills - what to do?

After 30 years of toe clips, I recently went "clipless" - speedplay's (with a new Jamis Quest).

I've always loved the challenge of hill climbing - I seek them out - the bigger the better.

I occasionally (slightly more frequently now that I'm 60+) find one that gets the better of me and I have to stop.

I wondering if there's some technique for clipless that allows you to stop somewhat "gracefully" when you've reached your limit and just can't "make the grade". I've hesitated tackling a few challenging hills because I don't know how/that I could "exit" the clips on a full uphill climb.

Suggestions/techniques (besides giving up hills or "falling")?
