alright roadies, I need answers quick please help

Long story but ill try to make it as short as I can. Ive been looking at getting an 05 trek 2100. Within the last couple of weeks trek changed the componets on it to full 105, instead of ultegra 105 mix. That really wasnt effecting my opinion though because im supposed to be getting it on pro deal for $850. The pro deal comes from a club member who works at a LBS. The thing is though, im not sure the owner knows about the pro deal so I can only deal with a couple guys who work at the LBS. I find out last week that it wont ship from trek until late november and get to them early december. I go in there today to get fitted and buy my 2100 on pro deal. The club member ive been dealing with isnt there and the owner tries to help me. I tell him im looking at a 2100 but he doesnt have one. He has an 04 Specialized Roubaix tagged at $1500 that he says he'll do for $1000, full 105 too. Very similar to the 2100 it seems. My question is buy the roubaix today for $1000, or wait, try and get my pro deal on the 2100 for proably about $930 after tax.

I could get the roubaix today, it seems to fit me well. Another issues is the Roubaix is a triple, I asked if they could convert it to a double, and he said they could just take of the inside chain ring and make it a double. Will this make it a true double? Will this mess up the gearing? Help me on my decison guys thanks.
