Provence is such a nice place, but I found it impossible not to go over Mont Ventoux every ride I did. Even on my last day I thought I'll go out for a few hours and spin out my legs, but managed to ride round the mountain half way, but got drawn in to going up and over from Sault to the summit and back down the awesome descent to Bedoin.

There is so much nice riding in the area though, Gorge de Nesque etc plus lots of nice smaller cols with great views. It is windy though, but your not racing, so just ride and enjoy the wind was my philosophy.
