Is that Nella place a complete ripoff? Even a restaurant resupply place would be cool to rummage around in. Daddy needs to invest in some better thick bottomed cookware, and knives.
Nella knives are great for restaurants where they are abused, droped, used to open cans etc. they don't hold an edge as well as 'professional' knives, but are easy to maintain. As for their equipment, should be about the same as other places. Besides cookie sheets what are you in the market for? I use silicone baking sheets at home, place right on the cookie sheet and no sticking ever, throw in the sink wipe down when done and ready fo the next batch.
