We tend to romanticize the past, but I highly doubt the morals or manners were anywhere near what you imagine. I believe it was rude to speak to anyone without a letter of introduction; or, if they were an aristrocrat and you were a commoner, the expectation was you speak only when they addressed you, as in: "You there! Fetch me a Hansom!" "Aye, Guv'nor (bloody toff!)", the last part being muttered.
