I've done quite a bit of stealth in public park/forest land in Ireland and Portugal, though in Ireland more often I just ask for permission, and sometimes get tired riding around trying to find the actual land owner and realize that nobody really cares anyway as long as there's no livestock, which means long grass and wet shoes sometimes.

In Portugal it's pretty common for people to just camp near a beach on any land that's not fenced off (and leave their garbage, yuck!) At least there are usually a lot of trees for the hammock.
