I have a 20 mile commute, which I always stretch into 25-30 miles. I get to sleep about half past 9, up at 0430. How much sleep and when depends entirely on the individual. The "you need eight hours of sleep to be in good health" thing is flat-out wrong. Some people need eight hours, others need a bit more or much less. I have gone for long periods of time at five hours. Over time, I have observed that between 6.5 and 7 is just perfect for me.
Commuting moderate to long distance really does require a strict schedule, if you are to enjoy it. You did mention that you are new to commuting. I would recommend alternating bike commute days, then step it up slowly until you are comfortable. You will find that eating regularly throughout the day will help keep your energy up, and setting up a routine will help your body adjust. Don't force it, and you be commuting nearly every day without a problem.
