Since you're on a trainer, you can still use the shifters with a 7-speed rear wheel. It's not that practical, but you basically need to get into a gear from shifting, and then adjust the derailleur cable tension using a barrel adjuster until it sounds like it's running smoothly. (It's essentially reverse engineered friction shifting.)
