Build. As much as I love vintage framesets as they were intended off the line, they're usually not spec'ed as I please.
The only machines running around in my fleet with an entirely stock gruppo are my '61 and '70 Paramounts - and even then, the '61 is partially exempt for having Phil hubs, Mavic MA-4 rims, and a NR crankset as opposed to a Record. My '78 Guerc is getting the NR treatment as original, but its also getting a few non-stock customizations (blue anodized CXP-22's) as well.
Otherwise, the rest of the fleet are custom builds, e.g.; Trek 610 with Campagnolo NR, '84 Raleigh USA Super Course with Campagnolo Triomphe, pearl-white '84 Raleigh USA Competition decked-out with matching pearl white Suntour Cyclone 700 components.
Speaking of which, I've been kicking around the idea of building up a mid '70s frame around a pair of CLB-2 centerpull brake calipers (nutted), and a Zeus 2000 RD. I keep wanting to do so on an '80s Schwinn Superior...
