Since op Driver88 lives in Europe, BikeFriday and Xootr Swift are less feasible, though both would be good choices otherwise.
My advice would be to look for a pre-owned Brompton 6-speed in very good condition, try it out for a while, and if it doesn't fit the bill, resell it ... probably for at or near the same amount, if the op maintains it well.
A 6-speed Brompton meets these criteria:
-- not too heavy and 'naked' (no racks, fenders etc)
-- RECREATIONAL, TOURING, FITNESS & no off road
