I'd add Jock Boyer's win of the Coors Classic as something memorable too - lapping the field umpteen times to take whatever minutes (4+?) out of the Columbian race leader in what was supposed to be a showcase crit. Lemond's was incredible though, to outride the USSR team single-handedly.
