Sorry, but, sounds like a bit of a misinformed post. (Unless you can direct me to some studies that show otherwise).
Sorry you feel that it's misinformed. The reality is that you are seriously misinformed.
You're diet mentions no fat, and only passing reference to slight protein (via grains).
This is not a balanced diet. And if you're having gas, something is not digesting properly.

Gas is caused by the digestion of carbohydrates and startches. It is not really caused by proteins or fats (it's a carbohydrate (raffinose) in beans that causes gas, not the protein). Some of the other sugars that cause gas are lactose, fructose and sorbitol, not to mention digestion of starches.
Excess levels of sorbitol and fructose can cause diarrhea (prunes are full of sorbitol...). This is irritating to the bowels (not to mention not healthy)
Many people also have issues with digesting fructose and sorbitol. Symptoms include excess gas. This affects up to 1/3 of the population.

Additionally, a lot of people who experience excess flatulence, are not producing more than others. The real issue can have several causes, like IBS for example.
You'd be silly to focus on treating your gas symptomatically without considering your health systemically first. Your body will do best with variety of both types of energy (protein/carb/fat) and sources. If you have gas from beans on a more balanced diet, there's always beano. It's a small price to pay, if you're on a restricted/vegan diet, and need more protein.
