To actually answer the one posed, I can see two potential problems 1) getting the chainline right going from the triple to the double. I doubt this is insurmountable, but it may require some spacers.
2) the chainrings rubbing on the chain stay. From pics of the FX 7.5, it doesn't appear that there is a lot of clearence between the big chainring and the chainstay as it is. The Easton crank will have a narrower Q factor, and a bigger outer ring (53T as oppossed to 48). It might be difficult to set up without the chainring scraping.
Also realize you likely need a new bottom bracket, and the Easton ceramic bb designed for the crank is going to push you over the cost of the entire bike new.
