Another Campy headset question (and a bonus rear wheel spacing ?)

First the headset question:
I have a 78 Raleigh professional frameset that I am working on putting together. All of the components that I have came from a 78 Raleigh Competition G.S. I have read that Nuovo Gran Sport headsets have short stack heights, will it be too short to use on my new frame? I don't want to press the headset races into the frame yet because I am going to have some paint work done. If it won't work, is there enough value in a Nuovo Gran Sport headset to sell it or trade it for one that would work?

Now the rear wheel spacing question:
I have a pair of wheels with Nuovo Tipo small flange hubs with a 5 speed freewheel and Weinmann concave rim. I know the Professional had a 6 speed freewheel, how can I tell if the axel is too short? how short is to short? I also have 1 record rear hub laced to a Rigida rim that I could use, but I am not crazy about having mismatched hubs.

I'm scrapping for money just to assemble this bike, so think budget as you respond. I would like to think that I will eventually replace all the gran sport components with NR, but that is a very long term goal.
