That's a great, easy to understand schedule.

Another easy-to-remember rule of thumb I saw somewhere here on Bikeforums was this - you can probably easily ride in a day what you normally ride in a week.

So, if you follow the schedule above and get yourself up to riding 100+ miles a week on a regular basis, then riding 100 miles in a day should be relatively straightforward for you, as long as you watch your pace, your nutrition, and your hydration. (eat plenty, drink plenty, don't ride too fast in the first part).

Sounds like given your experience you already know how to do that...
