I don't back-pedal all the time but when you ride crits it is very common to pedal and then back pedal a bit to get the pedal alligned going into a corner. I am almost always in the big chain ring in races and every once in a while then have uphill corners which require both the big chainring and cornering.
So, stopping back pedaling isn't a great solution although it does cover up or hide the problem. Does everyone elses bike not work in the Big-Big chainring combo? This is my only one.

I don't know, really, if my chain would derail in the big/big combination. I never ride there. There's other gears that would match or are close to that combination and I'd be in that one anyway. I can understand you desire to use that gear because of racing but if you have to fiddle with your chain because it came off, what did you gain?
It's not that you bike doesn't work in that combination, it's that you are asking something of it that it doesn't want to do. The chain is at a very sever angle in the big/big and when you back pedal, the chain naturally wants to fall off towards the smaller gears. You might try adjusting the low limit screw so that the derailer moves a slight bit inboard and takes pressure off the chain or you could try increasing the cable tension so that it holds the chain in place better. Perhaps moving the chainline inbroad will help also but you should already be inboard over the 126mm hub. Fiddle with it on the stand and perhaps you can get it adjusted to where you want it. However, expect it to be touchy.
