Depends on what kind of touring you will be doing. If heavy duty with a lot of gear, you will probably want to run some wide tires - 32mm or 35mm wide. The Mavic CXP-33 (~20mm wide) could fit those tires but you'd be better served with some wider rims meant for wider tires.

I'm planning a 3 week tour this summer and will be building up a pair of wheels for it. I haven't decided on the rims yet but I've been looking at Salsa Delgado Cross, Sun CR-18, and Velocity Dyad which are all about 23-24mm wide.
