The term "normal" seems to have no use in wheels anymore, but a "traditiona" rim depth would be anything around 20mm. Mid range (as far as aluminum hoops go) is around 25 and deep is 30+. In a loose generalization, deeper is more aero and stiffer while shallow is lighter and softer. For your weight, 28 spokes in the rear and 24 in the front would be plenty.
