A cadence of 90 should give you about 25.6 MPH.
I'm a 61 year old guy with bad knees and can do 80 no sweat! I do it on a lot lower gears though.
One gets the impression that if they spin out at all, they are spinning out a lot.
I went to a smaller top cog once because I thought that, and then found out I seldom used it.
Since then I went to shorter cranks, a 13-24 cassette and use my 38T ring 98% of the time.

You could stick your 11T cog back on, but you;ll have a 3T gap to the next gear. That's huge at the top end.
Did you really need the 32T cog with a 22T granny ring?
