That's why I said, "well chosen" selection. It only makes sense to stock and set up the most mainstream bikes (probably not BF lustworthy) in the most mainstream sizes. Anyone wanting a special size or product is, clearly, going to have to wait. You can't stock everything. But for those bikes you KNOW you're going to move four of this week, they ought to be set up and ready to go (if possible). A big part of the product you're selling at the LBS level is immediate gratification.
That's going to depend on the store and it's focus as well. Since all of our bikes are custom-fit to the rider, steerer tubes aren't cut, seat tubes aren't cut (on Looks), etc. We also do a decent amount of custom builds. Our main customer base isn't the "instant gratification" type. They are more methodical and are willing to take a week or so to get the perfect bike with the perfect fit and that will help them win races.
Me, I'm the instant gratification sort.
Where I work is clean, open, bright, etc.
Where I like to shop is old, shadowy, and cluttered.
